A Procurement Guide to HTST Pasteurizer Technology

For that reason, understanding what you are actually buying before you purchase a High Temperature Short Time (HTST) pasteurizer is worth the time investment.

What the HTST Pasteurizer Standard Actually Requires

The HTST pasteurizer has one non-negotiable job: heat every particle of product to at least 161°F (72°C) and hold it there for a minimum of 15 seconds. That time-temperature combination is the Pasteurized Milk Ordinance (PMO) standard for Grade A milk in the United States. In practice, meeting that standard depends on more than just heat. The system must maintain precise flow control, divert product automatically if temperature drops below the set point, and document every second of operation for regulatory review. A system that heats product correctly but lacks a properly functioning flow diversion valve is not a compliant system. Procurement teams need to understand that distinction before evaluating vendors.

Key Components to Specify

An HTST pasteurizer is not a single piece of equipment. It is an integrated system, and each component affects overall performance. The plate heat exchanger is the thermal workhorse. It heats incoming product using hot water on one side and recovers energy through a regeneration section, which uses outgoing pasteurized product to pre-heat incoming raw product. That regeneration efficiency directly affects energy cost over the life of the system.

The holding tube is the compliance component. Its length and diameter determine how long product stays at temperature at a given flow rate. Any change to pump speed or flow rate changes the hold time. For that reason, holding tube sizing must be calculated precisely at the spec stage, not adjusted after installation.

The flow diversion valve is the safety component. It monitors product temperature continuously and diverts flow back to the raw side if temperature drops below the set point. No compliant HTST pasteurizer operates without one. Beyond those three core components, temperature sensors, recorders, and controllers complete the system. In regulated environments, chart recorders or paperless recorders are required to document that every batch met time-temperature requirements.

What to Ask HTST Pasteurizer Vendors During Evaluation

Not all HTST pasteurizer systems are engineered to the same standard. During vendor evaluation, procurement teams should press on several specific points. First, ask how the system handles flow diversion and what happens during a temperature excursion. A clear, tested protocol matters more than a general assurance. Second, ask about regeneration efficiency. Higher regeneration percentages reduce energy consumption. A well-designed system typically achieves 90% or better regeneration. Third, ask about CIP compatibility. The system must be fully cleanable in place without disassembly. If the vendor cannot describe the Clean-In-Place (CIP) cycle parameters in detail, that is a gap worth probing further.

Finally, ask about service and parts availability. An HTST pasteurizer that goes down during peak production is an expensive problem. Vendors with in-stock components and a field service team respond faster than those who ship parts from a distant warehouse on a lead-time schedule.
